I *very sensibly* decided that in this heat, a recipe that was 90% chocolate was a better way to go…

Lately I’ve been brainstorming ways of how to make my bigger cakes easier to sell at fairs and festivals. These cakes being individual rectangular slices makes them easier to pack and serve, and as a bonus they look really pretty!

They follow my usual Victoria sponge recipe, the only difference is the filling and shape

200g Self Raising Flour
4 Eggs
1.5 Tsp Vanilla Extract

150g Unsalted Butter
300g Icing Sugar
About 5 Tbsp Strawberry Jam

For those of you who don’t know, I’m a student teacher! I’ve just finished my placement for this year, and seeing the school lunches had me craving some classic “school cake”. If you’re not from the UK this one might be a bit lost on you, but it’s essentially a vanilla sponge cake with glacé icing and sprinkles.

It’s such a nostalgic treat for anyone who went to a British primary school in the last 30 years or so, and I’ve enjoyed making it so much I’m tempted to try my hand at some other classic recipes too, so please let me know your favourites!

I’ve been doing a lot of recipe experimenting these last few weeks, so whilst I’m testing, I thought I’d have a little throwback to an old recipe of mine

This recipe uses the same ratios as all my loaf cakes, you just need to add a few handfuls of raspberries into the mix

I recommend coating your raspberries in flour first, as it will help to stop them sinking to the bottom of your cake

250g Self Raising Flour
