Oreo Muffins

These Oreo muffins are a perfect easy treat to whip up when you don’t have much time to bake! They follow my standard muffin recipe, but are stuffed full of Oreo biscuits.

Tips and Tricks
The decoration for these muffins is pretty simple, but you have two options to choose from!
You can either make up some glacé icing using icing sugar mixed with milk or water, or you can melt the filling of some of your Oreo’s and drizzle it over the top.


Method:
Preheat your oven to 170c fan and line your tray with 6 muffin cases
Beat your eggs in a bowl using an electric mixer for about a minute until it starts to look light and frothy
Add your oil and milk and mix until these are combined, then add your caster sugar and brown sugar, and mix again until your mixture is fully combined and fairly smooth
Add your self-raising flour and mix this in. Be careful not to over mix at this stage, I recommend doing it by hand if you're not confident about how long to mix for!
Chop up your Oreo’s into small chunks and fold them into your mixture
Fill each of your cupcake cases with about two tablespoons of the mixture
Sprinkle a few more Oreo chunks on top of your muffins and then pop them in the oven to bake for 24-26 minutes
Remove your muffins from the oven. You'll know they're done if they spring back when pressed and are golden on top
Leave them to cool
Mix 50g grams of icing sugar with milk, adding 1/2 a teaspoon at a time until it’s at a drizzle consistency OR melt the cream from any leftover Oreo’s and drizzle this over the muffins
