These s’mores bites are a quick and easy treat that are perfect for autumn. They take less than 10 minutes to make, and can easily be done in an oven, air fryer or with a blowtorch.

The Base
I do a cheesecake style base for these s’mores bites. Crushing up digestives and mixing them with melted butter makes a nice sturdy base. I chill mine for a little bit after, just to make sure they’re completely set.
You want your biscuit layer to sit across the bottom and the edges almost like a pie or tart.

Method:
If using an oven, preheat it to 120c
Crush your biscuits finely in a secure bag or container
Add your crushed biscuits to a bowl
Melt your butter and add this to your bowl, then mix it until the butter is fully spread through the biscuits
Press your biscuits into a mini cupcake tray, either silicone or with a layer of foil (this is important so you can remove them later)
Chill your cups in the fridge until they are firm (generally about an hour)
Melt your chocolate and add a teaspoon or two to each cup
Optional step: You can chill your chocolate here if you want to, I did as I think it’s easier to eat this way but you don’t have to!
Add a marshmallow on top of each cup
If you’re baking your cups, place in the oven or air fryer for 5 minutes until your marshmallows are toasted
If you’re blowtorching your cups like I do, simply just toast the top until they go golden brown
