Apple and Cinnamon Loaf Cake

This apple and cinnamon loaf is the perfect autumn bake. It goes excellently with a cup of tea which is absolutely essential in the weather we've had recently. This is a nice straightforward bake with minimal decoration. You can adjust the spices as you like depending on how strong a flavour you prefer.






Technique


The most important thing to take into account with this recipe is moisture. The apples add a lot of extra water to the bake, so it's important you take that into account when baking it.


The cake has a slow 50 minute bake at 160c which is effective. Just make sure to check your cake springs back when pressed before you take it out of the oven.




Method:


  1. Preheat your oven to 160c Fan

  2. Beat your butter and sugars together until it's fluffy and lighter in colour

  3. Mix in your eggs and vanilla extract

  4. Add your flour and spices and mix until it's all completely combined

  5. Grate in your peeled apples, I find this easiest to do if you keep the cores intact and stop grating when you reach them

  6. Fold in your apples and then pour your mixture into your lined loaf tin

  7. Bake in the oven for 50 minutes, or until it springs back when pressed

  8. Remove from the oven and leave it to cool

  9. Optional: Mix together some icing sugar, cinnamon and milk to make an icing you can drizzle over the top

  10. Slice and serve
